In Episode 462, it's shown that after Hagoromo and Hamura sealed Kaguya, everyone trapped in the divine tree came into existence and didn't turn into White Zetsu, which contradicts the fact that Black Zetsu said that everyone would become White Zetsu after the infinite tsyukomi.

Likely people trapped were changed overtime, from Kaguya's Infinite Tsukuyomi.
It's said that White Zetsu itself was brought out of Demonic Statue of the Outer Path, same as that spiral face Zetus, by Black Zetus.
The victims of Kaguya's Infinite Tsukuyomi can be separated into recent ones and others who had become husk(while those husks retains that person's personality to some extent, or could be husk itself developing childish behaviour).
I can't recall if anime has scene where Hagoromo and Hamura unseal the God tree branches, but manga didn't have that scene. Because when Naruto and Sasuke undo the Infinite Tsukuyomi, after they had sealed the Kaguya, it also disintegrated the spiral face Zetus.
And for case of Kaguya, we are not sure if she released or make exemption to some humans, as we can see that the world is no always in Infinite Tsukuyomi after she started one. And later some people had to be routinely sacrificed for adding new hosts for cocoons.
So I assume Hagoromo and Hamura didn't undo the Infinite Tsukuyomi as there was no ongoing one during their time. And if anime has scene where they undo something, it could be just only releasing the recent victims from cocoons, and not entirely undoing the Infinite Tsukuyomi. If not, there should be no existence of White Zetus.
And since it's recent victims, the cocoons didn't suck out their life entirely, just like everyone in cocoons are alive and well when Naruto and Sasuke undo the Infinite Tsukuyomi.
